Beet and Berry Smoothie

We have smoothies most days of the week. They’re not my kids’ favorite thing, but that’s probably because they’ve seen me make them and they know that unlike most smoothies, theirs are mostly vegetables. I will throw most any vegetable into the blender with a few berries and give it a try. I get their hesitation, because the smoothie I made one time when I accidentally grabbed the mustard greens out of the fridge instead of the kale was bad. So, my girls have developed a system of thumbs up or down after their first sip to tell me how they feel about the smoothie of the day. This smoothie has gotten two thumbs up and a “Can you make this again?” from both girls on more than one occasion, so I thought I’d pass it along to you.
Beet and Berry Smoothie
(makes 4 cups)
Ingredients:
1 cup filtered water
¼ cup raw seeds (I used sunflower seeds)
¼ cup ground flax seeds (fiber, omega-3's)
5-6 cups chopped organic kale (detoxification, anti-inflammatory)
1 cup frozen organic raspberries (antioxidants, fiber)
1 medium organic raw red beet* (anti-inflammatory, anti-cancer)
1 organic apple* (high fiber, anti-inflammatory)
1 banana (manganese, potassium)
2-3 tablespoons olive oil (healthy fat)
Directions:
Combine all ingredients in a blender jar, secure the lid, and blend until smooth.
Enjoy!
Notes:
*if the beet and apple are organic, then blend with the peels; if not, peel before blending.
