Creamy Banana Raspberry Shake

Sometimes I just need a little something to get me through the day. One afternoon after chasing children around all morning, I got my toddler to bed for a nap and the older two settled quietly reading. I went to the kitchen in search of an afternoon pick-me-up. The fridge and the pantry were bare. There wasn’t even a chocolate chip in the house for me to enjoy. I ended up throwing some frozen bananas, raspberries and coconut milk in the blender. And...oh my goodness...it was SO good. I drank half right then and saved the rest for later. That evening my husband went searching for dessert and came back with my banana raspberry creation. “Wow,” he said. “This is actually pretty good." (High praise indeed!)
So, next time you need a sweet treat, skip the processed foods and added sugar and give this yummy drink a try.

Banana Raspberry Milkshake
Makes 3-4 servings
Ingredients:
2- 3 frozen bananas
8 ounces frozen organic raspberries
1 can full fat coconut milk* (cold)
⅓ - 1 cup additional liquid (water or dairy-free milk)
Directions:
Peel bananas and chop into thirds. Place in freezer on parchment paper. (At least 2 hours)
Add frozen bananas, raspberries and coconut milk to your high speed blender.
Blend. Add more liquid to reach desired consistency. The longer your bananas have been frozen the creamier your drink will be, but you may also need additional liquid.

Notes:
*Healthy fat is an essential part of a healthy diet and full fat coconut milk can be a great source of healthy fat. But don’t overdo it all it once. Your stomach likely won’t appreciate you drinking more than a serving of this drink at a time.
