Monkey Salad

We often joke at my house that we make more dishes before 8:00 am than most people do in an entire day. While I don’t think that is entirely accurate, sometimes in certainly feels that way. When you are making your own food from scratch every day for every meal, dishes often seem never-ending. Which is why I love having some really simple meals to throw in the mix.

We don’t eat cereal, so Monkey Salad is the easiest breakfast we make. My kids and husband love it and I hope you will too.



 

Monkey Salad

makes 4 servings


Monkey Salad

Ingredients:

  • 5-6 bananas, chopped

  • 1 cup frozen blueberries, thawed

  • 1 cup salted cashews (or raw)

  • ½ cup raisins

  • ¼ cup raw pumpkin seeds

  • 4 pinches chia seeds


Directions:

Divide chopped bananas between 4 bowls and evenly distribute the other ingredients among the 4 bowls. Done! :)


Notes:

*Frozen blueberries are better than fresh blueberries for this recipe. I like to set the blueberries in the refrigerator the night before so they are thawed when we wake up. *Do not use a microwave to thaw your blueberries.

*You can use just about any nuts, seeds, or dried fruit to top your Monkey Salad. Be creative and throw on whatever you’ve got! (On occasion I let the kids add a few Enjoy Life Chocolate Chips to their Monkey Salad and they think it’s pretty amazing! )
