Tropical Sunrise Smoothie

What better way to start your kids' day than with a good dose of healthy fat for their brains and nutrient-rich veggies and fruit to build up their bodies? My kids and husband really like this smoothie. I make the amount below, then divide it evenly between 8 or 9 jam jars so I can pull a new jar out for my kids each morning.
Tropical Sunrise Smoothie
(makes 64 ounces)
Ingredients:
⅓ - ½ head of cauliflower, chopped
2 bananas
⅓ cup raw pumpkin seeds*
1 can full fat coconut milk
Juice of ½ a lemon
Enough frozen mango and pineapple to fill the remainder of the blender
Add water for desired consistency
Directions:
Place all ingredients in a high-powered blender. (We love our Vitamix!)
Blend well and enjoy!

* Don’t skip the pumpkin seeds!
